We're actually a few months overdue on updating the blog, so there's some catching up to do. We're about 9 months into the project, most of the delays due to our design specifics, and also because both us and the fair city of SM were just being picky about certain stuff.
There had been a previously approved restaurant on this location which had a specific layout which was not suitable for our requirements. Now began the back and forth with the city planning and health departments. We wanted all these floor drains which were not in the original plan, we needed more power, more storage, a larger ventilation system, an extra toilet would be nice, why does the city take soooo long to approve everything??
When we took possession of the site, we were basically met with an eviction notice on the front door, and a partially built restaurant. In order to save valuable time, we decided to try and modify whatever we could and keep as much as possible of the original design. Hopefully our adaptation will work out as we planned.
